Since 2004, Psairer mountain cheese dairy in St. Martin in Passiertal has been producing cheese and other dairy products in artisanal fashion and in accordance with Bioland guidelines. The dairy sources milk from just 20 organic farms in Passeiertal valley, resulting in top quality South Tyrolean cheese.
Anyone flying 1st class with Lufthansa has already had the chance to enjoy the dairy's no. 1 product – their hay cheese. 12 different types are produced in all, including organic Camembert, organic Plattner (a type of Fontal), Schneeberger, Schildhöfer and Blauweißer cheeses.
Psairer mountain cheese may be found served in 4 and 5 star hotels with an awareness of quality and organic farming all over South Tyrol, as well as in the refrigerated sections of supermarkets, butchers, bakers and organic shops in Burggrafenamt. In the shop in St. Martin in Passier, other products from the dairy, Ultner organic bread, traditional juices from local producers and 15 traditional types of cheese like gorgonzola or grana from dairies in South Tyrol are on sale as well as the 12 types of Psairer mountain cheese.
